Turkey Chili

Take a few minutes out of your morning to start this recipe and get it into the crock pot. By the time you get home from work and school, your chili will be ready and waiting for you. Everyone in the family can take a bowl at their convenience- a hot and healthy dinner, on everyone’s schedule. Chili also makes great leftovers that can be an easy option throughout the week.

Turkey and beans provide protein to support muscle recovery, while beans also add carbohydrates for energy. Tomatoes contribute fiber, vitamins, and minerals, making this a balanced and filling meal for active kids.

Servings: 10

Ingredients:
  • 2 lbs ground turkey
  • 1 (46 fl oz) can tomato juice
  • 1 (29 fl oz) can tomato sauce
  • 2 cans kidney benas, rinsed
  • 1 yellow onion, chopped
  • 1/4 c chili powder
  • 1 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/8 tsp cayenne pepper (optional, adjust for spiciness)
    Optional add-ons:
  • Box elbow macaroni
  • Shredded cheddar cheese
  • Sour cream
  • Tortilla chips
Directions:
  1. In a large skillet over medium heat, cook the ground turkey and chopped onion until browned and crumbly, approximately 8-10 minutes.
  2. Pour tomato juice, tomato sauce, beans, and spices into the slow cooker and set it to low.
  3. Mix cooked turkey and onion into the slow cooker mixture, stir and cover. Cook on low up to 8 hours.
  4. Optional: serve over macaroni, topped with sour cream and/or shredded cheddar cheese. Add extra cayenne for more spice or leave it out entirely for a milder finished chili.

Tips:

Store the leftover chili in the fridge for up to four days.
After cooling in the fridge, ladle several servings into a freezer bag and freeze them. Frozen bags of chili will stay good for up to six months and are a great option when you don’t even have time to prep- just heat and eat!
