Build your own burrito bowl

You can use this recipe to replicate the Chipotle or Moe’s experience at home, leaving everything unassembled so that every family member can make their bowl to their exact specifications.

Chicken and beans provide protein for muscle recovery, while rice, beans, and corn supply carbohydrates for energy. Fresh toppings add fiber and nutrients, and the build-your-own style makes it easy for families to customize meals while still supporting balanced nutrition. Ingredients can be prepped ahead of time and assembled as needed, making this especially helpful for the family on the go.

Ingredients:
For the marinade:
  • 1/2 red onion, chopped
  • 2 cloves garlic
  • 1 tbs chipotle pepper in adobo
  • 3 tbs vegetable oil
  • Juice from 1 lime
  • 1 tsp oregano
  • 1/2 tsp cumin
For the bowls
  • 1 lb boneless skinless chicken breast
  • 2 cups jasmine rice
  • 2 tbs butter
  • Juice from 1/2 lime
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • Shredded Monterey Jack cheese
  • Shredded iceberg lettuce
  • Pico de gallo or salsa
  • Pickled jalapenos
  • Tortilla chips
  • Guacamole
Directions:
  1. Combine all ingredients for chicken marinado in a food processor and blend until smooth. If being made without a food processor, chop onion, garlic, and adobo peppers finely and add to liquid marinade ingredients. Add marinade and chicken to a resealable plastic bag and shake to coat thoroughly. Refrigerate for half an hour or up to three hours.
  2. Cook the rice: cook jasmine rice as directed on the package. When fully cooked, life the lid off the pot and add 2 tbs butter and the juice of half a lime. Please the lid back on the pot and let set for 5-10 minutes.
  3. Remove the chicken from marinade and cook in a grill pan over medium heat for 6-8 minutes per side, until cooked thoroughly. Let cool slightly and then chop into rough chunks.
  4. Assemble the bowls: place remaining ingredients out so that everyone can choose their toppings. Serve with a side of tortilla chips.

Tips:

Pack individual portions in meal prep containers so that each family member can heat and eat their dinner as it fits their schedule.
